Craterellus tubaeformis – winter Chanterelle or Yellow Foot
‘Winter Chanterelles like colder temperatures and will last well into the winter months. They are not exactly Chanterelles but have a delightful flavor, Unfortunately, they are small and tubular, so very light, meaning it takes a lot of them to make a dish, but they come up in troops so you can cut them off with scissors for your basket. They vary in color from brown to yellow, with a brighter yellow at the foot and show up late in the fall, often after a short frost, fruiting near the rivers in mixed conifers. Best if eaten fresh.
